Raw Vegan Pumpkin Cheesecake Bars

You won't want to stop eating these little bites of heaven! Beautiful creamy texture, with hints of delicate spices. Sure to please at any holiday party!

  • 1 ½ cups cashews
  • ¾ cup pumpkin puree
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ cup full-fat coconut milk
  • 1 teaspoon vanilla extract
  • ½ cup maple syrup
  • Juice of ½ lemon
  • A dash of salt
Crust Ingredients
  • 20 medjool dates pitted
  • 1 ½ cups nuts you can really use any you have. I used a mix of almonds, pecans, and cashews
  • 1/3 cup ground flax seed
  • 1 teaspoon coconut oil
  • 1 teaspoon cinnamon
  • a dash of salt
Optional Toppings
  • Drizzled almond butter, pumpkin seeds, pecans
