- 1 cup almond meal
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 tbsp coconut oil
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- optional 1/2 tsp almond extract
- Jam as topping
Preheat your oven to 350 degrees F.
In a food processor (or by hand) blend all of the ingredients together.
Roll into balls
Press thumb in center, fill with jam.
Bake for 16-18 minutes until golden brown. Easy peasy!
These cookies are made to be not too sweet. If you want a sweeter cookie try adding 1 tbsp coconut sugar.
