Thumbprint Cookies (GF, Vegan, Paleo)
These paleo thumbprint cookies are:

Everyone should be able to eat their favorite classic treats, no matter what your dietary restrictions are. Thumbprint cookies are a classic and should have a paleo/gluten free option! They’re one of my favorite cookies, they’re simple, classic and give me a nostalgic feeling of making these as a child.
I made these thumbprint cookies with health in mind, they are low in sugar with only 1 tbsp in the whole recipe. I used whole almonds that I ground into a meal to use as the flour, making them high in healthy fat, protein and vitamins. I wanted a cookie made from all whole real ingredients and that was dietary intolerance friendly! Success! Remember, despite them being healthy they are still high in fat, which means high in calories! Eat in moderation!
VEGAN PALEO THUMBPRINT COOKIES
- 1 cup almond meal
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 tbsp coconut oil
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- optional 1/2 tsp almond extract
- Jam as topping
Preheat your oven to 350 degrees F.
In a food processor (or by hand) blend all of the ingredients together.
Roll into balls
Press thumb in center, fill with jam.
Bake for 16-18 minutes until golden brown. Easy peasy!
These cookies are made to be not too sweet. If you want a sweeter cookie try adding 1 tbsp coconut sugar.
