Paleo Lemon Cookies

- 1 1/2 cup almond flour
- 1/2 cup arrowroot starch
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tbsp lemon zest
- 1/4 cup coconut sugar
- 1/4 cup maple syrup
- 1 1/2 tsp lemon extract
- 1/4 cup coconut oil melted
- 1 cup powered sugar
- 1 tbsp fresh lemon juice
Preheat oven to 350 degrees F.
In a food processor blend your almond flour, arrowroot starch, baking soda, salt, and coconut sugar.
Once combined add in the rest of your ingredients. It's that easy! Blend until combined, being sure not to over mix.
Scoop a tablespoon size amount of dough and form into balls.
On an ungreased baking sheet place balls 2 inches apart.
Bake for 13-17 minutes or until golden brown.
While cookies are cooling mix the powdered sugar and lemon juice.
I used a ziplock to pipe on the glaze. You can choose to just drizzle it or spread it on.
To make refined sugar free:
1. omit the frosting which has powdered sugar
2. make your own powdered sugar with coconut sugar
