Paleo Lemon Cookies (GF, Vegan)
These paleo lemon cookies are Highkey delicious! I wouldn’t call them super healthy! I mean if you account for the use of only natural, real ingredients then sure they’re “healthy”. But these cookies are as sweet as your smile! Defiantly a dessert or special treat, not something I would eat everyday. Despite that they’re a welcome addition to our pantry, I literally can’t stop eating them!
Cookies are my biggest vice. I literally do not allow myself to buy them or bake them because my self control goes right out the window. Right out of the oven I try one, I mean, you have to see how they taste! And then once they cool down you have to test to see if they turned out. And you know, an hour later I might sneak another one, they’re just so good! Long story short, they don’t make it very long in my house.
These paleo lemon cookies would be perfect for a special occasion, take to a party or get together. Trust me, they won’t last long!

PALEO LEMON COOKIES
- 1 1/2 cup almond flour
- 1/2 cup arrowroot starch
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tbsp lemon zest
- 1/4 cup coconut sugar
- 1/4 cup maple syrup
- 1 1/2 tsp lemon extract
- 1/4 cup coconut oil melted
- 1 cup powered sugar
- 1 tbsp fresh lemon juice
Preheat oven to 350 degrees F.
In a food processor blend your almond flour, arrowroot starch, baking soda, salt, and coconut sugar.
Once combined add in the rest of your ingredients. It's that easy! Blend until combined, being sure not to over mix.
Scoop a tablespoon size amount of dough and form into balls.
On an ungreased baking sheet place balls 2 inches apart.
Bake for 13-17 minutes or until golden brown.
While cookies are cooling mix the powdered sugar and lemon juice.
I used a ziplock to pipe on the glaze. You can choose to just drizzle it or spread it on.
